Leonid Shutov, le propri\u00e9taire, a parl\u00e9 \u00e0 decanter.com de son projet \u00e0 15 millions de livres.<\/p>\n<p><!--more--><\/p>\n<p>Leonid Shutov (photo), qui est d\u00e9j\u00e0 propri\u00e9taire de Bob Bob Ricard dans le quartier de Soho \u00e0 Londres, a conclu un march\u00e9 \u00e0 15 millions de livres pour s&rsquo;installer au 12, St James&rsquo;s Street, au c\u0153ur de Mayfair, luxueux quartier de la capitale anglaise.<\/p>\n<p>Dix-huit mois devraient \u00eatre n\u00e9cessaires pour que le restaurant de luxe de 250 couverts et de 1 850 m\u00b2 ouvre ses portes et propose une cuisine fusionnant classiques anglais et sp\u00e9cialit\u00e9s russes.<\/p>\n<p>Il a fallu deux ans pour trouver le lieu. \u00ab Je n&rsquo;ai pas l&rsquo;habitude de faire des compromis \u00bb, a d\u00e9clar\u00e9 Leonid Shutov dans un entretien \u00e0 decanter.com. Il a \u00e9t\u00e9 conquis par l&rsquo;immense salle \u00e0 manger du 12, St James&rsquo;s Street, une raret\u00e9 au centre de Londres.<\/p>\n<p>Mais c&rsquo;est l&rsquo;ambition de Leonid Shutov de cr\u00e9er une des caves \u00e0 vin les mieux fournies du secteur de la restauration britannique qui fait vraiment parler de ce projet.<\/p>\n<p>Une collection de vins rares et d&rsquo;exception devrait venir occuper les \u00e9tag\u00e8res de la cave du restaurant, d&rsquo;une capacit\u00e9 de 60 000 bouteilles. Des formats classiques de 75 cL c\u00f4toieront des magnums, des j\u00e9roboams et m\u00eame des balthazars de 12 L.<\/p>\n<p>La cave devrait comporter 100 mill\u00e9simes d&rsquo;Yquem dont le plus ancien remonterait \u00e0 1887, du champagne Krug de 1915, des bouteilles de Clos du Mesnil et de Clos d&rsquo;Ambonnay (Krug \u00e9galement), ainsi que plusieurs mill\u00e9simes des Premiers Grands Crus Ch\u00e2teau Haut-Brion et Ch\u00e2teau Margaux.<\/p>\n<p>\u00ab Seuls les deux tiers de la cave environ sont pr\u00eats, il reste donc encore beaucoup \u00e0 faire \u00bb, a indiqu\u00e9 Leonid Shutov. Il compte proposer de nombreux vins au verre, dont 10 mill\u00e9simes d&rsquo;Yquem des 30 derni\u00e8res ann\u00e9es, et des Mouton-Rothschild des ann\u00e9es 1980.<\/p>\n<p>Les vins du Nouveau Monde, comme les vins am\u00e9ricains, australiens et n\u00e9o-z\u00e9landais, seront aussi repr\u00e9sent\u00e9s mais \u00ab dans l&rsquo;absolu, les gens veulent boire du bordeaux \u00bb. La cave comportera tout de m\u00eame une bonne quantit\u00e9 de Domaine de la Roman\u00e9e-Conti ainsi que des \u00ab super toscans \u00bb et des vins espagnols. \u00ab J&rsquo;ai toujours \u00e9t\u00e9 un grand amateur de Vega Sicilia \u00bb, a ajout\u00e9 Leonid Shutov.<\/p>\n<p>Les vins sont en g\u00e9n\u00e9ral acquis sur le march\u00e9 ouvert, ce qui demande beaucoup de travail. \u00ab Nous cherchons de fa\u00e7on quotidienne, au m\u00eame titre que les autres acheteurs \u00bb, a d\u00e9clar\u00e9 Leonid Shutov. \u00ab Nous essayons \u00e9galement de rester en contact \u00e9troit avec les producteurs, ce qui nous est utile, mais plus dans une optique de conseil que d&rsquo;achat. \u00bb<\/p>\n<p>La provenance est \u00e0 la source de plus en plus d&rsquo;inqui\u00e9tude sur le march\u00e9, surtout apr\u00e8s la r\u00e9cente condamnation \u00e0 New York de Rudy Kurniawan, escroc dans le domaine des grands vins.<\/p>\n<p>\u00ab Comme nous sommes un restaurant ind\u00e9pendant, nous ne pouvons pas acheter de vin sans savoir avec assurance d&rsquo;o\u00f9 il vient \u00bb, a d\u00e9clar\u00e9 Leonid Shutov. \u00ab Je ne parle pas que de son authenticit\u00e9, mais \u00e9galement du pass\u00e9 du vin. Nous voulons acheter aux domaines directement, ou avec le moins d&rsquo;interm\u00e9diaires possible. \u00bb<\/p>\n<p>\u00ab Nous devons faire attention.
