AOC BEAUNE
Red
A deep cherry colour followed by flavours focused on black and red fruits (blackcurrant, cherry, raspberry) and violets. The body is discreetly tannic and rich while preserving the fruitiness. With roundness and volume, balance and power in fair proportions the taste often evokes the cherries with a beautiful elegance.
WINE MAKER
In 1947 Henri Buisson decided to bottle wine with his name on the label. Gilles and Monica then expanded the estate with prestigious names: Corton-Charlemagne, Pommard, Volnay and Beaune. In the 70s, Henri Buisson was already working in organic farming, and now the last two of the family, Frederick and Franck, continue the work started by their grandfather. BIO certification was given in 2009 and the first wine without suffering was marketed in 2011. The Organic Agriculture label stamped on the 2012 vintage is proof that the torch was passed into good hands.
SITE
The plot of Les Prevoles is wedged between the city of Beaune and the premiers crus.
GRAPE VARIETY
100% Pinot noir.
SOIL
Argillaceous, Limestones and Colluviums.
GROWING METHOD
The vines, grown in organic agriculture, have never received chemical fertilizers, herbicides and pesticides, and the soils benefit from organic and microbial life that contributes to plant everything it needs to produce perfectly healthy, ripe grapes.

VINIFICATION
Sorting in the vineyard and in the winery. Eraflage 90%, slightly crushed. Long maceration and alcoholic fermentation. Alcoholic fermentation with natural indigenous yeasts.
AGEING
Ageing on lees for 12 months in French oak barrels of 10% new oak.
