« Le Grand Moulin » is a perfect example of varietal exactitude. Bone dry in style, packed with lime and minerality. Patrick Girault’s 2010 Le Grand Moulin is from a parcel near the famous Chêne Marchand where the soils are dominated by caillotte pebbles.
WINE MAKER
Domaine Girault is the continuity of a family business, a long lineage of wine growers. Patrick Girault (8th generation), has recently been joined by his son Adrien.
SITE
The vineyard is located in Bué, a small village in the heart of the Sancerrois.
GRAPE VARIETY
100% Sauvignon Blanc.
SOIL
Clay and limestone with «caillotes» pebbles.

Sustainable viticulture.

7 000 vines / hectare.
VINIFICATION
After having been pressed and decanted, the wine ferments in vats and matures on lees until spring when it is bottled.
